What I love most about Hello Fresh is how the meals are easy enough to get my kids involved. My daughter just turned 11 and my middle child is 9 and they tag-teamed on making us dinners a few nights when our box arrived. 1.) One Pan BBQ Pulled Chicken Tacos with Creamy Slaw & Red Onion
These BBQ chicken tacos were a big hit with my kids! We love tacos, and the zesty BBQ sauce and chicken were delicious alongside some crunchy sriracha mayo cabbage slaw with chopped cilantro. The best part was this chicken was already cooked, so this was a true one-pan meal that was simple and quick to make!
2.) Bahn Mi Style Meatball Bowls with Pickled Veggie Salad & Ginger Rice
Okay, to be honest, this from-scratch meal had a few more steps involved like grating fresh ginger and garlic, and rolling meatballs, but the extra work was well worth this restaurant-worthy dinner! Oh my goodness, I loved this flavorful meal and want to create my own version soon. The Jasmine rice was so delicious and the aromatic beef meatballs were incredible!
